Elizabeth Sloffer

Elizabeth is a Ph.D. student in the Department of Food Science and Human Nutrition. Her concentration is food science, and she has also completed the Gender Relations & International Development (GRID) Minor though WGGP. Elizabeth is a U.S. Borlaug Fellow in Global Food Security and is a recipient of the Barbara A. Yates Award for International Research sponsored by WGGP. Her dissertation focuses on gender, nutrition, and agricultural linkages in rural Honduras. She is specifically interested in the food utilization dimension of food insecurity and ways that women perform the role of food utilizer for their families and communities. She hopes to develop better indicators of adequate food utilization and to improve the quality of agricultural extension programs for women.

Previously, Elizabeth’s research focused on the development and stability of lipid nutrient supplements used for the treatment of moderate acute malnutrition without edema. This project is aimed at improving the shelf-life and quality of lipid nutrient supplements.

Recently, Elizabeth was a coauthor on the WGGP white paper, Marginalized Women Speak: Using Biographical Performances to Inform Development Research Programs and Policies. She has presented her research on lipid nutrient supplements at the Institute of Food Technologists.

Elizabeth holds a B.S. in Food Science from Purdue University. She has nearly four years of working experience in the U.S. food industry working on new product development, food safety, food quality and food ingredients. She is HACCP certified. Elizabeth speaks English and German and is learning Spanish.
