FSHN CLASSES TONI GIST TEACHES PROVIDED SEVERAL JAMES SCHOLAR PROJECT CHOICES

  1. NUTRITION EDUCATION EVENT PLANNING AND EXECUTION: Work with University Housing Dining Services’ dietitian to promote student engagement and education during National Nutrition Month in March! James Scholars will take the lead on creating, planning, promoting, and executing a nutrition-focused event aimed at increasing participant knowledge and encouraging student interaction. With dietitian approval and oversight, you will have the freedom to choose your topic and craft event learning objectives, create and plan activities, and access resources from Dining Services to execute your project. Event space options include a classroom-style demo kitchen within ISR’s Dining Hall, pop-up booths within any of the four Dining Halls or Dining-managed retail locations, pop-ups in the Ikenberry lobby, lecture/classroom-style rooms in any of Dining-managed buildings, and more. Project obligations will end with the conclusion on National Nutrition Month on March 31st.

  2. VOLUNTEER WITH THE FOOD ASSISTANCE AND WELL-BEING PROGRAM (FAWBP) AT UIUC: If you would like to grow your resume by working with the FAWBP to host a food and hygiene product drive, this may be a great fit for you! It is the FAWBP’s mission to ensure that the Illinois community has access to nutritious food and key necessities in a welcoming and educational space. We collect demographic information and a variety of other data to improve processes and ensure that it is equitable, inclusive, and accessible to meet the needs of the diverse Illinois student population.
  3. HEALTH AND WELLNESS PROMOTIONS: James Scholars can work with support staff to create 4 unique articles to submit in Canvas to be considered for publication in Campus Well after having each reviewed by a campus Writer’s Workshop (https://writersworkshop.illinois.edu/). There are monthly deadlines associated with this project.
  4. HEALTH AND WELLNESS COACHING: Join forces with Campus Recreation Student Wellness and actively contribute to enhancing our Student Wellness Coaching sessions. Engage in reflective writing and readings, participate in a Wellness Coaching intro session as a client, and after attendance, write a final reflection on your experience and acquired insights.
  5. NCAA NUTRITION INTERNSHIP: We have designed a nutrition internship working with Illini Fuel and the NCAA  athletes. Each semester it takes on a slightly different focus.  However, each semester you will be working to ensure that the UIUC athletes are properly fueled and hydrated. Generally, James Scholars will choose to volunteer for either the first or second 8 weeks of the semester for 2 hours per week.  Reliability is key to success with this opportunity.
  6. Disability Resource Education Services (DRES): There is a need to level the learning field for all individuals. One of the steps to do so in health education is ensuring that individuals who need captioning or could merely benefit from captioning can connect with health-related learning materials.  In this unique DRES internship for your James Scholar program, you would be closed captioning a variety of health and wellness-related videos for your peers as well as individuals beyond UIUC.  If you are majoring in education, any health-related fields, and/or speech & hearing sciences this may be an amazing opportunity for you to grow your resume. Training is on your own time (2-4 hours at https://canvas.instructure.com/register. To join the training, use the code: HH4FN3). Training must be completed by February 16th with all hours completed by April 19th. After training is completed, scholars can begin the 20 hours of service for the semester.

  7. SPROUT PROJECT FELLOW: Join the Sprout team, a project within Illinois Enactus that aims to educate local youth on career opportunities in the agriculture industry! James Scholars will spend 20+ hours writing engaging lessons and planning fun and creative activities for kids aged 10-17 for an agricultural business curriculum that will be implemented in the Fall 2024 semester at Cunningham Children’s Home. James Scholars will be required to write at least one week of curriculum with the help of the Sprout team, but they are welcome to stay and help for as long as they’d like afterward! Knowledge/experience in the agriculture industry or curriculum writing is not required but highly encouraged! Applications are due Sunday, 1/28 by 11:59pm.

  8. VOLUNTEER IN A HEALTH-RELATED FIELD: Volunteering in the community for 20+ hours with a health-related focus will earn James Scholar credit. You will need to find and secure the volunteer opportunity on your own and acquire a letter from your supervisor after the 20+ volunteer hours.

The steps to request and complete a 20-hour James Scholar Project are outlined below: 

  1. Review the project guidelines above
  2. Sign up at https://volunteersignup.org/9TA7W 
  3. Fill out and formally submit the HCLA specific to your college (every college has a different form — be sure to google HCLA UIUC [your college name] to find your form)
  4. Confirm that I approve your project using the HCLA form. Follow up if a week has passed and you do not have formal confirmation. That is the only way for me to be able to enter an honors designation once you complete your project. 
  5. Work hard to finish the project successfully (if you are unsure if you are or have completed your requirement, it is best to discuss personally during office hours, in person after class, or if neither of those works you can schedule using the YouCanBookMe scheduling link)
  6. Once all of the above are completed in full, submit your completion form with all needed documentation here.
IMPORTANT: Toni will contact those who complete steps 1-4 by the 2nd week of class.  At the end of the semester, you must upload your specific required documents in the Google form (#6 above) for James Scholar Consideration.  For example:  
  • Volunteer work requires a letter from your supervisor with the number of unpaid hours you volunteered specifically for FSHN 120 James Scholars 
  • All other opportunities require an email or note from the Project Liaison.
