Description
This study aims to assess the effect of MIND diet consumption on cognitive function in middle-aged adults. The hypothesis is that MIND diet adherence will benefit cognitive function in middle-aged adults, and this benefit will be mediated by the improvement in macular pigment optical density (MPOD) and cardiovascular health. The study examines the effects of a 12-week dietary intervention on MPOD, arterial stiffness, and cognition (executive function) among 45-64-year-old adults.

What’s Involved?
If you decide to participate in this study, you will be invited to complete the procedures outlined below and receive the study meals, which will be described in detail below. The testing procedures will be performed in Freer Hall. You must visit Freer Hall 4 times over the next 3-4 months to complete four laboratory visits. Each visit is expected to last approximately 2-3 hours.
You will be asked to schedule visits 1 & 2 at the beginning of the study (before receiving the meals). You will be asked to schedule visits 3 & 4 after the 12 weeks of study meals. Visits 1 & 2 and 3 & 4 will be scheduled as closely as possible. We will ask you to refrain from consuming meals and beverages other than water for at least 10 hours before visiting the laboratory for 2 of the visits.
Compensation
If you complete the first 2 study visits, you will receive $75. You will receive an additional $125 after the final visit to the laboratory (Testing Visit 4). All payments will be in the form of an electronic Amazon gift card sent to you via email. However, we can also issue you a check if you prefer.
